Pumpkin Soup

1  small/medium  Pumpkin

1 small onion diced

1 carrot chopped

2 celery sticks diced

2 cloves of garlic minced/diced

1-2 teaspoons  of Indian  spice seasoning

2tsp of Tamari

2tsp of miso paste (Yellow/white)

1/2 cup of coconut milk (lite)

1 cup of filtered water

Place raw clean pumpkin  uncut in pan with 1/4 cup of water. Bake the pumpkin for 45-60min in the oven at 350 degrees, Cut in half when soft from baking.  Remove pumpkin pulp and seeds with a spoon. Puree pumpkin pulp/squash. (set aside) saute all the vegetables, add garlic after vegetables soften to liking. stir in all other ingredients.  Heat/warm and serve.
