Collared Greens and Bean Soup
Collard Greens and beans are good for you eat up!

Bean/Black Eyed Peas and Collard Green Soup

1-2 Cups of dried white beans/Black Eyed Peas

(Your favorite dried beans, soak overnight/8 hrs/boil 1 hour drain and rinse)

1-2 bundles of Collard Greens (Remove stems and breakdown into bite size pieces)

1 small onion (Diced)

2 Cloves of garlic (Minced)

4 carrots (Chopped/Diced)

Tbs. Rosemary

Tbs. Thyme

2 Quarts of water

4tsp Better than Bouillon (Vegetable based)

2 Tsp. of Curry

Pinch of Cayenne pepper

Pinch of Sea Salt (Optional)

In a large pot, sauté onions and carrots in Tbs. of extra virgin olive oil, add garlic thyme, rosemary.  Add beans and collard greens , add 1 quart of water and Better than Bouillon.  Add seasonings: curry, cayenne pepper, and sea salt. Cook over medium heat for 2 hours stirring occasionally.
